FROZEN YOGURT BASE
for Soft Serve Machines

Swiss-Yo is REAL FROZEN YOGURT.

It was initially developed for the sophisticated French Canadian palette. It often receives acclaimed comments like ‘fantastique’ and ‘sensationnel’ for its delicious tart/tangy yogurt taste.

Swiss-Yo is different to berryo® in the sense that it is very creamy and with strong dairy notes prevalent in the taste where berryo® tends to lean more towards a frozen yogurt closer to a sorbet texture.

Swiss-Yo is a true frozen yogurt (according to FSANZ – Food Standards Australia & New Zealand) as it contains the required amount of beneficial yogurt bacteria (>1,000,000/g), the pH is below a certain specified level (< 4.5 pH) and the protein level meets the minimum required level (>4%). It can therefore be marketed as REAL FROZEN YOGURT in most countries.

Ingredients: Sugar, Milk Solids, Dietary Fibre (Inulin), Flavor, Food Acids (330, 331), Vegetable gums (412, 410, 466, 407), Emulsifiers (471, 322 Soy), Yogurt Powder (Milk, Culture), Live Cultures.

Packaging: Swiss-Yo powder base is packed in airtight food-grade, foil-laminate bags – 6 x 2 kg bags (or 12 kg) per carton.

Storage / Shelf Life: Storage is below 25º Celsius (77ºF) with a shelf life of 12 months. After mixing, it is stored below 5ºCelsius (41ºF) and used within 3 days.

Yield: Each bag (2 kg) is mixed into 4 litres of water (so yield per bag is 6kg).

Each carton yields 36 kg (~32.7 liters) of liquid base ready for freezing down in a soft serve machine

This is equivalent to 480 serves of 75g (2.6 ounce) per carton (which is ~110ml or 3.7 ounce using a pump machine @ 60%overrun).

This is also equivalent to 360 x 100g (3.5 oz) serves per carton.


 

 

Mixing is simple:

  • Pour 4 litres water into graded mixing container.
  • Open one bag (2 kg) and add to water while whisking/whipping with a wire whisk/whip.
  • Stir until ingredients have fully dissolved.
  • Cover and stand for 10 minutes allowing ingredients to re-hydrate.
  • Pour into soft serve machine and freeze down - ENJOY!
