Yotalia is a Premium Italian-Style Yogurt Gelato Base.

Yotalia is similar in taste and texture to traditional Italian-made Yogurt Bases, yet with much better functionality - especially when used in soft serve machines.  Yotalia can be used in both soft serve machines and batch freezers. The texture is very smooth and creamy and the taste is sublime! This is a premium quality product not to be missed.

Yotalia cannot legally be called ´frozen yogurt´.

Ingredients: Milk Solids, Sugar, Yogurt (Milk, Culture), Food Acids (330, 334), Flavour, Vegetable Gums (405, 407, 412, 415).

Packaging: Yotalia powder base is packed in airtight food-grade, foil-laminate bags – 7 x 1.75 kg bags (or 12.25 kg) per carton.

Storage / Shelf Life: Storage is below 25º Celsius (77ºF) with a shelf life of 12 months. After mixing, it is stored below 5º Celsius (41ºF) and used within 3 days.

Yield: Each bag is mixed into 3.5 litres of water. Each bag then yields 5.25 kg liquid mix. Each carton yields 36.75 kg (~33.4 litres) of liquid base ready for freezing down in either a soft serve machine or batch freezer. This is equivalent to 490 serves of 75g (2.6 ounce) or 368 x 100 gram (3.5 oz) serves per carton.

 
Mixing:
  • Pour water into a graded mixing container.
  • Open one bag and add to water while whisking/whipping with a wire whisk/whip
  • Stir until ingredients are fully dissolved.
  • Cover and stand for 10 minutes allowing ingredients to fully re-hydrate.

    (As Gelato Base, at this point it is usually pasteurized, but yogurts curdle when heat is applied to milk protein and acids. It will also kill all the beneficial yogurt bacteria. This step is therefore usually skipped but care should be taken to use the best hygiene practices during mixing and storage and pasteurized milk and/or a clean source of water should be used for mixing.)

  • After 10 minutes, add any purees if you want to pre-mix purees into the gelato or any fruit syrups if it is a soft serve that you want to flavour.
  • Pour into Batch Freezer / Soft Serve Machine and freeze down
  • Add fruit puree as a ripple during extrusion with gelato if preferred.
